  4. THE SCOTCH MALT WHISKY SOCIETY (SMWS) The Scotch Malt Whisky Society (SMWS), founded in Edinburgh in 1983, is a membership organization which bottles and sells single cask, single malt whisky. It purchases individual casks from more than 125 malt whisky distilleries in Scotland throughout the world, bottles them and retails directly to its members. It also runs three private members’ rooms in the UK and in several international locations. The resulting “outturn” of each cask is given a unique, two-part numerical identifier, representing first the originating distillery and second the individual cask from which the bottle was taken. The number of bottles available from each outturn of cask can vary- but single casks by their very nature only produce a limited amount of whisky so, more often than not, there is only a small number of bottles available, making each release and sought-after. • SMWS 3.278 • This is a Bowmore with a refill ex-bourbon hogshead whisky under the “Dirty martinis in the boat shed” bottling serie from SMWS. On the nose, candy floss, oyster shells, sea breezes over the machair, boat sheds and woolly socks drying over wood burning stoves. The palate has light heather and lavender smoke, peppercone heat, liquorice, sticky honey-glaze barbecued stuff and a zing of salt. • SMWS 3.279 • This is a Bowmore with a refill ex-bourbon hogshead whisky under the “Evokes Van Gogh’s Provence” bottling serie from SMWS. The nose is sweet (clover honey, toffees) and savoury (Chinese ribs, honey-cured bacon), with clams, salty sea breezes and heather moor-burn. The palate has toffee, honey, perfumed smoked and “more lavender than Van Gogh’s Provence; Edinburgh Rock and Trebor mint chalkiness. • SMWS 7.155 • This is a Longmornwith a 2nd fill ex-Sauternes hogshead whisky under the “Making cakes by the crackling fire” bottling serie from SMWS. Candied orange, stone fruits, cape gooseberries, honey, coconut milk and salted butter, nutmeg, aniseed and cloves. The smell was glorious! As the bitter wind blew forest leaves under the door we huddled around the fire with a hot cup of black tea and a block of dark chocolate. After maturing for 24 years in an ex-Bourbon hogshead this whisky was transferred to a 2ndfill ex-Sauternes hogshead for the remainder of its maturation. • SMWS 10.85 • This is a Bunnahabhain with a 2nd fill ex-sherry butt whisky under the “Live life on the edge!” bottling serie from SMWS. The flavour is sweet and thick like sponge pudding. Water released the image of horse riding on a beach during a shoer, finishing with a glass of Amontillado. • SMWS 10.149 • This is a Bunnahabhain with a refill ex-Bourbon barrel under the “Sweet, Salty Maritime Symphony” bottling serie from SMWS. The nose is a sweet , salty maritime symphony- ice cream and candy floss at the beach fairground. The palate has lovely acidity to balance the sweetness- raspberry brownies or Ruffle bars (coconut, raspberry, dark chocolate) – charred oak warmth in the finish. The reduced nose is balanced and airy- sea breezes over dunes or standing a brand new yacht deck (eating yellow plum jam). The reduced palate is as salty as a dream of sailing tropical seas on a tall-masted ship and as sweet as manna –and like manna, don’t bother saving any for tomorrow.   5. SMWS 11.31 • This is a Tomatin with a 1st fill barrel whisky under the “All toasty and cosy” bottling serie from SMWS. A silky veil sweet of vanilla and butter pastry. Floral honeysuckle and elderflower tantalised and teased before delicately delivering custard creams, candy canes and pink Turkish delight. A citric breeze of kiwi and fresh strawberry passed by perhaps mixed and mashed into a creamy milkshake. Then the dry spiciness of pink peppercorns and sweeter garam masala with turmeric blending perfectly with the woodiness of dry seasoned oak. The finish was rich and long lasting, chewy and pleasing, with a memory of butter on toasted malt loaf. • SMWS 29.188 • This is a Laphroaig with a refill ex-bourbon hogshead whisky under the “Cowboy beans” bottling serie from SMWS. Quite rich malty nose with that sweet peat note. Honey, lemon curd, chemical smoke. Hints of new leather pomelo, grapefruit. Bitter wood and dry leaves at first, then a big wave of brine. Long, soapy and salty dried fish. Sweet peat, quite dry. • SMWS 29.201 • This is a Laphroaig with a refill barrel whisky under the “Peat smoked candied Angelica” bottling serie from SMWS. A lovely smoky sweetness on the nose. The taste however was a medicinal peat smoke, ash and tar attack, almost acrid but saved by the dark sweetness of chewy treacle coffee. Water turned the nose into smoked chicken pot pie with a sweet potato crust and the taste will completely transformed; gentle sweet peat smoked candied angelica on a salted chocolate tart. • SMWS 29.205 • This is a Laphroaig with a refill barrel whisky under the “Two wheeled beach cruiser” bottling serie from SMWS. The sweet smell of sticky pork ribs on a BBQ hung in the air along with smoked rhubarb crumble with whipped cream and roasted limes. • SMWS 29.233 • This is a Laphroaig with a 1stfill ex-Madeira hogshead finish whisky under the “Permeating Sweet Smoke” bottling serie from SMWS. Aromas of sweet cigar smoke combined with maple cured smoked bacon and grilled corn with a honey-ginger barbeque sauce permeating the air. A sweet crystallized fruit flavour dominated the taste initially neat but that was soon followed by a crisp mineralic acidity which then led to a powerful, mouth filling, never-ending explosion of peat smoke. Water added mussels in a creamy curry sauce as well as oysters with shallot vinegar whilst on the palate a warming clean sweet smoke lingered on. After 19 years in an ex-Bourbon refill hogshead, then transferred into a 1st fill Madeira hogshead. • SMWS 35.158 • This is a Glen Moray with a refill ex-bourbon hogshead whisky under the “Curry in a Hurry” bottling serie from SMWS. An initial aroma of newly varnished wood was soon followed by profiteroles with hot chocolate sauce. The taste was that of lentil stew with Peshwari naan bread. Diluted: caramelized onion and apple chutney, and in the finish a mango lassi. • SMWS 35.189 • This is a Glen Moray with a 1st fill Pedro Ximenez hogshead whisky under the “Spiced Fruit on a Treacle Tart” bottling serie from SMWS. Cinnamon, nutmeg and ginger with damsons, hazelnuts and figs on a sticky treacle tart. Previously matured in an ex-bourbon hogshead.   6. SMWS 36.129 • This is a Benrinnes with a 1st fill ex-red wine hogshead whisky under the “Sweetmeats in a Bedouin Tent” bottling serie from SMWS. Orange, dried fruit, plum trifle and dunnage wood. Then sweet white wine, orange peel, sweetmeats and dates, followed by peppercorn and cranberry. • SMWS 36.131 • This is a Benrinnes with a refill Bourbon barrel whisky under the “Vivid String of Flavours” bottling serie from SMWS. The nose was delightfully fresh, floral and sweet, with heather honey and vanilla, but fruit was the major component – apricot, plum jam, pear and candied orange. The palate had a smooth and velvety mouth-feel and a long intense, almost vivid string of flavours – pineapple, caramelized brown sugar, candied ginger and bourbon like wood char. The reduced nose had concentrated pear, ‘mirabelle’ yellow plums, with ice-cream cone and oaty cereal notes, rich caramelized glacé cherries on banana split. • SMWS 37.94 • This is a Cragganmorewith a refill ex-Bourbon hogshead whisky under the “An Aromatherapy Massage” bottling serie from SMWS. Placing a massive tick in the box positioned next to ‘satisfying’ we couldn’t help but take things easy with the sweet and fragrant aromas of apples, pears and chocolate with sea salt and caramel. Lemongrass and coconut merged with a complex floral fusion of rose gardens, honeysuckle and license. The chocolate now combined with hazelnuts, brazil nuts and desiccated coconut crowned with tinned pineapple chunks. Water did nothing but increase the sweetness by developing notes of nougat and apple pie with caramel sauce. The finish carried malt loaf with honey and the lasting herbal freshness of peppermint. • SMWS 46.56 • This is a Glenlossiewith a refill ex-Bourbon hogshead whisky under the “A Cheerful Chatterbox” bottling serie from SMWS. A lively and self-assured chatterbox of a dram, it enthusiastically spread the gossip about the stewed apples and the pears and the minor occurrence with the fine ladies perfume. Not to mention all the news about sandalwood and cedar wood and how they should spice up their life with a bit of cinnamon stick and ginger. Tingly pineapple, camphor and a hint of eucalyptus playfully rolled off the tongue and introduced a musky perfume mixed with crunchy leaves and sweet wine gums and vanilla. Water certainly did not dampen any spirits but instead released banana skin with chocolate and a finish of tobacco and a sandalwood orange box. • SMWS 50.91 • This is a Bladnoch with a refill barrel whisky under the “A Throwback” bottling serie from SMWS. Aromas of strawberry cream candy, pineapple chunks, fuzzy peach candy, caramelized banana ice cream in a chocolate cone. Taste of dark chocolates with a stem ginger centre or a runny sweet and lightly salted caramel core. Diluted we reached for a tangy lemon ice cream with plenty of lemon zest and juice whilst on the palate, a crisp apple dipped in gooey caramel and crunchy rainbow sprinkles. • SMWS 55.41 • This is a Royal Bracklawith a 2nd fill Sauternes hogshead barrel whisky under the “Soothing and Inviting” bottling serie from SMWS. The nose was invitingly sweet, fruity and juicy. Candied orange and lemon slices, pineapple, apple sour liqueur and candy floss with some sweet Madeira wine depth behind it all. The palate had toffee chocolate éclairs and cinnamon Danish sweetness but with a spritely chilli and popping candy mouth-feel. • SMWS 71.47 • This is a Glenburgie with a refill barrel and ex-bourbon barrel whisky under the “Citric Spicy Whisky Lassi” bottling serie from SMWS. The nose is a breakfast of grapefruit and Manuka honey. The palate adds strawberry jam and a spicy, fruity “lassi” drink. All prices are subject to 10% service charge and prevailing government taxes

  7. SMWS 93.80 • This is a Glen Scotia with a 1st fill ex-Bourbon barrel whisky under the “Rough Around the Edges” bottling serie from SMWS. On the nose neat it was a real mixed bag of aromas ranging from smoked mussels and Thai sweet chilli scallops, to custard creams served with mint tea to a freshly laid tar road and finally a hint of medicinal cough remedy. Quite an experience which was aptly followed by the taste; an explosion of peat smoke and chilli heat combined with tart cherries, slightly unripe gooseberries and a freshly brewed LapsangSouchong tea. After dilution sweeter notes appeared like that of a smoked cardamom vanilla latte while on the palate a spicy smoky crab cake Panini and to finish plenty of salty liquorice. • SMWS 96.15 • This is a Glendronachwith a refill ex-Bourbon barrel whisky under the “Lively as a basket of bees” bottling serie from SMWS. The nose is sweet and mild – apricot jam, dried mango and fruit gums, custard slice and raspberry sauce on vanilla ice-cream – quite summery and floral too. The palate starts sweet and citric – orange peel, lemon pastry tart - the Haribo dummies and sherbet notes make it lively as a basket of bees. Slowly it develops perfumed notes and eventually tobacco strands and pickled ginger. The reduced nose is on the green and citric side of fruity, but you can also find honey, chocolate Swiss roll and Oreos. The palate is sweet, easy and delightful, with playful effervescence and mild lip-tingling heat. • SMWS 100.16 • This is a Strathmillwith a refill ex-Bourbon hogshead whisky under the “Classic Cranberry Cosmo” bottling serie from SMWS. An attractive combination of very subtle, soft and sweet aromas greeted the Panel. Juicy mandarin segments in cinnamon syrup, honeydew melon with mint, basil and lime, as well as passion fruit & coconut panna cotta – all perfectly knitted together. A fizzy sweetness on the palate like an old fashioned fresh cranberry Cosmopolitan served in a chilled cocktail glass with a lime twist as garnish. Be very careful when adding water. After a little splash, a bouquet of yellow roses was presented and the taste was spiced candied orange peel in a delightful light and delicious honey lime fruit salad.   10. THE SINGLE CASK The Single Cask is a whisky shop, bar and independent bottling company run by Ben Curtis with offices in London and Singapore. The whiskies bottled are all single cask, single malt and grain bottlings at natural strength, which are available to several markets around the world, including the UK, Singapore, Denmark and Taiwan. The independent bottling company was founded in 2010 and initially called Malt Vault, although it began bottling under The Single Cask label at the same time. English Whisky Co. 7 Years Old #443 7 years old English whisky from the English Whisky Co., independently bottles by The Single Cask. A small release of only 249 bottles. Thick cut marmalade, peppery oak leading into salted caramel brownies. More vanilla-rich baked goods with a touch of honey in the mix too. Apples and pears covered in toffee. Tomintoul 22 Years Old 1995 #2156 22 years old single malt from Tomintoul, drawn from a single cask and bottled by The Single Cask! This was distilled in May 1995 and bottled in May 2017 with an outturn of just 264 bottles. Guava, lemon cheesecake, a little whiff of tobacco. Deliciously creamy, with waves of vanilla, sponge cake and butter. Slightly developing hints of brown sugar and black pepper.   11. EILING LIM Eiling Lim is the first independent bottler of Scotch whisky in Malaysia, a milestone notched in 2014. Her family name, Lim, is the Mandarin character for woods or forest; when split into two the resulting character is that of wood- the most important element of an exemplary whisky cask. Eiling Lim Older than Old The label of this brand-new Eiling Lim release tells us it’s “artisan blended malt whisky, older than old and 100% premium quality”. We’re heard some of the content goes back to the 1970s but remember, officially we can only tell you the youngest component is from the 1990s. Aromatic sherry up front. Fruity with light savoury touches and a pleasant acidity. A little Earl Grey and linseed oil. Chocolate. After a while there’s more tobacco, honey coated roasted nuts and a light earthy hint. More plums and sherry, kumquats. Wee touches of herbal liqueurs. Medium long, clean, honeyed and delicately spicy. Eiling Lim Bessie’s Dram Simple and simply right, a high-end distillate. Clean phenolic smoke, with a pear sweetness behind it, almost mezcal if not for the beach sand, oysters, saltwater and such. Not as medicinal as the double-digit expressions. Lemons and mint. Warm and slightly acrid smoke, phenols, seawater. Less sweet than expected, given its youth. Some burnt grass, ginger, lemon. Quite vibrant. Brine and smoke really, with some earthly notes in the end. Long, briny, smoky, all good. Eiling Lim Glenrothes 1997/ 2016 19 Years Old Matured in a 1st-filled Pedro Ximenez sherry cask. A very distinctive dark sherry hue. Aroma of dark chocolate, Rosabaya espresso, balsamic vinegar, soya sauce, raisins, orangette and mandarin. A balance of very dark chocolate, licorice, hints of cedar wood, cinnamon and grapefruits. A long and rich finish, slightly dry with hints of coffee, cocoa and walnuts.   12. THAT BOUTIQUE-Y WHISKY COMPANY That Boutique-y Whisky Company is a UK based Independent Bottler of Scotch whisky, American whiskey, Blended malt whisky, Grain whisky and Blended whiskey. The bottlings carry graphic-novel-style labels depicting industry insights, jokes and Easter eggs relating to the distillery; by artist and illustrator Emily Chappell. In April 2016 That Boutique-y Whisky Company started adding age statements to their bottlings for the first time. That Boutique-y Whisky Company has won several significant awards for their bottling, including World’s Best Blended Whisky at the 2015 World Whisky Awards. • That Boutique-y Whisky Company Ardbeg 12 Years Old Batch 14 • An indie Ardbeg- always exciting stuff! This is a 12 years old single malt from the Islay-based distillery. It features Geert Bero, Ardbeg collector and proprietor of the legendary Ardbeg Bar at Hotel Bero, on the label. Frazzles, black pepper, a hint of caraway. Peanut brittle, burnt lemon, seaweed and smoke. Lasting sea salt and oily walnut. • That Boutique-y Whisky Company Bowmore15 Years Old Batch 8 • The massively well-loved Bowmoredistillery has resided on the Isle of Islay since 1779- it’s the oldest Islay whisky distillery and it’s still going even today! The distillery is home to its very own malting floor, an eight ton stainless steel mash tun, six washbacksand two pairs of stills, which actually produce enough heat not only to make their lovely peated whisky, but the waste heat from the stills heats the nearby pool! The label features a young lad with a freshly-swiped bra from the pool’s changing rooms legging it from one of the pools’s lifeguards. Orchard fruits open, fresh with a hint of blossom too. Gentle peat smoke wafts on a salty breeze. The sweetness of the orchard fruits linger behind a driftwood beach bonfire, smoke builds and hints of salinity remain. Hints of dark chocolate with a whisper of refined oak and buttery vanilla. • That Boutique-y Whisky Company Clynelish 24 Years Old Batch 4 • Behold the fourth batch of Clynelish single malt independently bottled by That Boutique-y Whisky Company! Cat meme continue to be a source of much mirth on the internet (and at MoM Towers), and Clynelish continues to produce stunning whiskies, so this bottling has really worked out rather well indeed. Saffron fragrance, cut oak, raisin and cherry bakewells. Peppercorn and clove, followed by fragrant malt and Demerara sugar. Gingerbread, toasted teacakes with honey.   13. That Boutique-y Whisky Company Linkwood 11 Years Old Batch 4 • It’s a bit like that chap with the ship and had all its wood replace. It’s the same ship, even though everything has been replaced. Right? The chap on the label is fixing a broom – the owner has had the same broom 20 years just with different heads and handles, it’s still the same broom, though. Right? Apple pie with vanilla ice-cream and a sprinkle of cinnamon. Butterscotch, malt loaf and milk chocolate is cut through by spicy woody tannins. Black peppercorns crackles through a touch of banoffee pie. • That Boutique-y Whisky Company Octomore 10 Years Old Batch 2 • Coastal air and seaweed bring a wave of salinity among bricks of freshly-cut peat and heavy oak char. Vintage cider apples, buttery shortbread and a hint of gingerbread warmth are present underneath. Sticky toffee pudding and salted caramel stand strong against waves of big peat and bonfire notes. The peat note becomes more earthy and is joined by a fizz of winter spice, a heap of soot and clean aniseed. • That Boutique-y Whisky Company Port Charlotte 13 Years Old Batch 4 • Meaty, peaty and coastal! Frazzles, nutty, earthy, forest floor pine needle, dry slate, a salty sea breeze and oily smoke. Slightly oily with citrus notes, salted caramel popcorn promptly followed by meaty BBQ flavours. Long with bacon flavours crisps lingering with gentle smoke leaving a sooty end… • That Boutique-y Whisky Company Tomatin 16 Years Old Batch 2 • Starts in a typical grassy way with soft chalky notes. Ardbeg Corryvreckan Sticking plasters, buttery, creamy, roast chicken crisps, herbal, almost a hint of pine…. Cream, spices, tingling, fresh fruit, medicinal, plasters, orange peels. Salty, smoked meats, peat is fleeting. Astonishing. • Ardbeg Uigeadail • The undiluted nose is deep and rounded- chocolate caramels and barley sugar combine with dates, raisins and smooth sherry notes. Sweet, chewy and oily with a silky mouthfeel. The flavour is initially sweet, revealing fruit cake and treacle. This is followed by barbecued or honey roast food with the slightest hints of olives. • Ardbeg Kildalton 2014 Release • This special limited one-off Ardbeg was released in order to raise money for The Kildalton Project- is an effort to “support” fragile, rural communities’ across the North Highlands. In particular, a good portion of the funds are to be used to restore the St. Columba Village Hall in the distillery’s near-neighbouring village of Port Ellen. Smoky and briny, but soft for a contemporary Ardbeg. Lemon squeezed over oysters on the half shell. A little bit of lime and chocolate too. Quite coastal and oceanic. Good balance of peat and sweet. • Ardbeg 21 Years Old 2016 Edition • This new limited edition Ardbeg Twenty One is a non chilli filtered, matured entirely in 200 litre ex-bourbon casks and bottled at 46% ABV. Old gold on the colour. As expected with an older whisky, the peat isn’t as pronounced. Very coastal at first, with salt-spray and lemon juice. Once that settles there’s a beautiful sweet peat note mixing with the vanilla from the American Oak. Smoked salmon, sage, assam tea, burnt bacon. Gentle but there’s plenty of peppery warmth- either from the peat or the wood, it’s quite tightly bound together. Vanilla returns with a touch of floral honey combined.   20. Ardbeg Kelpie Kelpie gets its name from the kelp seaweed found around Islay and is finished in oak from the Adyghe region of Russia near the Black Sea. The nose is peaty and complex with notes of seaweed, brine, dark chocolate, smoked salmon and a hint of honey. The taste is spicy, smoky and pungent with notes of clove, peat smoke, bacon and hints of toffee and dried fruits. The finish is very long and smoky with lingering clove, hints of creosote and touches of caramel and dark chocolate. Ardbeg Supernova 2015 Release In case you didn’t know, tubes of “Ardbeg-crafted molecules” that also contained sticks of charred oak was sent to space. The idea was to compare their interactions to those of control samples on earth and the result have now been published. To celebrate he conclusion of Ardbeg’s experiment in space, they released this final Committee release of the super-duper-peated Supernova single malt. At 100PPM compared to Ardbeg’s usual 55PPM, this is one of the most heavily-peated whiskies in the world! Deep with smoked chilli, soot, vanilla, green banana and linseed, tinned nectarines, cocoa and vanilla. Super peaty toffee, crystallised ginger, lime marmalade, star anise, iodine, sweet vanilla and espresso. A light, refreshing mouth feel with brown sugar, vanilla and lemon peels. Very subtle hints of sea breeze. Dry and medicinal with exotic spices, perhaps even some turmerics. The palate is surprisingly savoury at first- think musty wood sheds and hints of moist autumnal forest floor. Oaked. The mustiness carries into the finish, which lasts for a good while, with oily spices and dried fruit. • Laphroaig 10 Years Old • This opens on big, smoky muscular peat notes. There are spices and liquorice as well as big dose of salt. Seaweed-led with hints of vanilla ice cream. An upsurge of spices develop- cinnamon, black pepper and chilli. Big and drying as the savoury, tarry notes build up with an iodine complexity. • Laphroaig 10 Years Old Cask Strength Batch #008 • Hints of cold wood ash and buttered granary toast with not quite enough honey. A very evocative scent, which gives way to peaches and cream and LapsangSouchong and allspice. Very robust, and intensely “muscular”, this is a real brute, with all kinds of smokiness. It’s almost like crunching down on a lump of coal (but one coated in beautifully sweet toffee). Good length, drawn out by the embers on a fire, vanilla, charred bourbon barrels and toffee apples by a fireworks display. Laphroaig 25 Years Old Matured in second -fill Oloroso Sherry cask and American oak ex-bourbon barrels for 25 years! Initial sherry sweetness followed by an Islay peat tang. Burst of peat restrained by a sherry sweetness that develops into a spicy apple fruitiness. Very long and slightly dry finish. Laphroaig 30 Years Old Asynergy of mandarins and mango round up the aromas of burnt almonds and coconut. Peat oils, smelling like cedars, boxberry and smoky sage gives this premium whisky its distinctive and characteristic flavour. A drop of water sets hints of honey and apricot free. Wonderful oily, the aroma of orange peels, vanilla and coriander merges with those wild ginseng and cigar. As we’ve learned, bonkers PPMs don’t necessarily mean blow your head off smoke bombs- floral notes and refinement make their way into Octomore releases. • Octomore 07.4 • Octomore07.4 has endured quite an interesting maturation – 25% of it was aged entirely in virgin oak casks, while 75% of it spent 3 years in first filled bourbon casks, followed by 2 years in virgin oak casks and then 2 more years in first filled bourbon cask. Chewy raisins, flamed orange peel, BBQ char and sweet smoke. Intensely oaky. Oodles of peat smoke, carried along by citrus peels, honey and ground spices.   23. Octomore 08.1 • Octomore 08.1 is made using Scottish barley and is peated to 167ppm. Aged in American oak barrel, this is fruity and smoky with notes of vanilla, melon, citrus and marzipan. • Octomore 08.4 • Octomore 08.4 was created to examine the effect of virgin oak on Bruichladdich’s intensely peaty spirit. To achieve a balance of smoke and oak characteristics, 20% of the whisky was matured exclusively in virgin oak, while 80% was aged in first-filled ex-bourbon casks and then finished in European virgin oak, which had previously held Octomore 7.4.   24. SINGLE MALT | SCOTLAND, HIGHLANDS As a very vague rule of thumb, the Highlands region is one of big-bodied whiskies, often peated and smoky and powerful. The Highlands is such a large, diverse region that is difficult to categorize their whiskies accurately. Ardmore Single Malt A young peat Highlander from the excellent Ardmore Distillery. Creamy peat tang and a touch of vanillas soft gentleness if a touch of water is added the flavours increase with the addition of a sweet ripe fruit start followed by the tars of peat. • Ben Nevis 10 Years Old • Fresh and quite dry. A supple greenness with soft leafy notes with a rich fruitiness. Hints of orange and Seville marmalade with a light vinous character and nutty undertones. Gentle dryness. Toffee. Looming omnipresent are solid peat notes with a bitter sweetness. Silken, toffee and caramel notes balanced with a touch of mochaccino and dark chocolate on the tail. Clynelish 14 Years Old A delightfully complex spicy and perfumed nose with some floral and malty hints. The palate is multi-layered too with some slight citrus hints on a honey background with peat and delicious spices before a honey finish with a trace of brine. • GlenDronach8Years Old The Hielan • Honeyed malt, vanilla fudge and citrus peels. Slightly chocolate-y raisin notes and a little cinnamon. More spice comes through on the palate, but the vanilla-rich buttery elements remain up front. Freshly baked biscuits topped with almonds and plump sultanas. Quite long finish with sherried fruit and ginger lasting. • GlenDronach 12 Years Old • Rich cereals, struck match, raisin, cinnamon, caramelized sugar. Opens with some sweeter PX and lots of delicious raw ginger before becoming creamier with hazelnuts. Fruits, peels, buttery. Pain au chocolate, a little marmalade on toast before becoming firmer and nuttier with spiced raisins. Smoky toffee and nut brittle. • GlenDronach 15 Years Old Revival • This 15 year old GlenDronach marks the release of whisky under new distillery ownership. Matured in Oloroso sherry casks, this was awarded a Silver Medal at the 2009 Malt Maniacs Awards. • GlenDronach 15 Years Old Revival 2018 Release • The revived Glendronach Revival: a whisky whose original incarnation was so popular that we drank all of it. It’s back with a new recipe thanks to master blender Rachel Barrie, combining both Oloroso and PX casks into a rich sherry-monster that’s packed with spice and fruit. • GlenDronach 18 Years Old Allardice • There’s a hint of old rum with pineapple and brown sugar in tow. Christmas cake, rum again, chocolate-coated hazelnut, runny honey and a hint of Sauternes. Fresh blackcurrant, blueberry pancakes with a generous helping of maple syrup. • GlenDronach 21 Years Old Parliament • Soft smoke and lemon juice, cedar wood, apple peel, toasty oak, soft earth, date and walnut cake and a hint of freshly made espresso. Golden syrup, soft, juicy raisins, tangy oak notes, peach, cherry blossom, cocoa and honey dew melon. Sherry tones lead the finish, with a hint of sulphur, chocolate, luscious fruits and pepper.   25. GlenDronach 1993 Cask # 564 23 Years Old • This 23 years old from the GlenDronach distillery was distilled on 5th March 1993 before spending the next 23 years in a single Oloroso sherry butt. Bottled in October 2016, only 575 individually numbered bottles have been produced at a strength of 58.9% abv. A rich cherry wood in colour, the nose opens with chocolate covered raisins and rich prune syrup, with oak spices, cinnamon and black pepper. The palate has stewed barley notes flowing through rich fruit cake with dark chocolate and oak spices adding to the long and warming finish. • GlenDronach 1992 Cask #43 24 Years Old • This 24 years old from the GlenDronach distillery was distilled on 1st May 1992 before spending the next 24 years in a single Oloroso sherry butt. Bottled in November 2016, only 644 individually numbered bottles have been produced at a strength of 52.1% abv. Robust notes of dark roasted coffee beans combined with sherry soaked dark fruits, infused with rich oak spices and a herbal back note. Rich dates and dark prunes spiced with stem ginger and black peppercorns, combined with dark chocolate and hints of tobacco leaves. • Glengoyne15 Years Old • Glengoyne'snew 15 year old is a rich, rounded single malt, completely devoid of peat smoke thanks to air-drying the barley. It is aged in both bourbon and first-fill sherry casks, with some refill cask whisky thrown in for good measure. Hints of candied lemon and a touch of butterscotch. Creamy cereal sweetness and porridge oats. Demerara sugar. Oily, rich palate entry with notes of toffee popcorn, salted butter and hints of ground walnuts. Allspice and lemon rinds. Oaky, malty finish. • Glengoyne18 Years Old • This 18 year old was aged in refill sherry and first-fill sherry casks. Hints of soft spice and dried peels. A little apricot, honey and vanilla. Creamy custard and dried peels. Allspice, Manuka honey and hints of butterscotch. • Creamy caramel and malt. Candied peels. • Glengoyne21 Years Old • Oak, barley, red fruits. Barley and oak, possibly erring on the side of too much oak. Winter spice, cider. Christmas cake, honey and rich fruit with long cinnamon finish. • Glengoyne Cask Strength- Batch 4 • This is the 4th batch of Glengoyne Cask Strength. Bottled at 58.8% ABV, this is particular intense, though a little bit less sherried than previous batches. Brown bread, summer berry tart with thick, crumbly pastry, a touch of floral malt. Pear, apple and white peaches. A touch of tart berries. Thyme honey. Peppery oak. Lasting sherry cask influence- particularly dark chocolate bitterness. • Oban 14 Years Old Single Malt • The nose is rich and smoky. The medicinal notes are quite evident with notes of the sea, seaweed, tarry ropes. There are notes of cut hay and wood smoke rising with a gentle sweetness. The palate is thick and full. Notes of citrus with smooth sweetness. The finish is of good length with fruit and dry oak. • Old Pulteney 12 Years Old • Deep amber with a slight pink hue. Medium to high intensity, dry with a briny hint of sea air. Sweet, floral, citrus : lemon and lime plus dry banana skin. Smooth and faintly salty. • Old Pulteney15 Years Old • Toffee, coffee and sultanas. Balanced sweetness of toffee and sea spray salinity. Salted caramel cookies, green apple sharpness, sea salt and straw. Chocolate with red chilli. A hint of spiced rum warmth.   26. Old Pulteney 17 Years Old • This 17 years old is comprised of 90% refill bourbon casks with the remainder being from oloroso casks. Lovely sweet aromas of butterscotch, honey and chocolate with some faint salt and oak spice on the palate. Sherbert, red berries, lemons and a little bit of rich fruit that’s almost on the turn. Sugar sweetness quickly leading to dry wood, with some dried apricots and raisins. Water brings out more fresh sweet and sour fruit- plums and their stones. Long with dry wood and apples. • Old Pulteney18 Years Old • Released as part of a fleet of new expressions by Old Pulteney in mid 2018, this 18 years old single malt is drawn from a combination of bourbon and Spanish oak casks. Cinnamon-spiced cookie dough, mature oak, a very light touch of charcoal. Dark chocolate and green apple make for a great juxtaposition of bitterness and sweetness, while waves of vanilla and rye bread sit in hen background. Citrus, sea salt and wet grass. • Royal Lochnagar 12 Years Old • Planed wood, light toffee, boat varnish. Linseed oil behind, even putty and later a lychee-like acidity. With water the acidity comes through and the nose sweetens. A pleasant fresh woodiness, followed by warm sand. Medium-bodied. Dry medium length with an attractive lingering sandalwood aftertaste. • XOP (Xtra Old Particular) Single Malt 30 Years Old • A rich and warm spiced nose, carries ginger and butterscotch infused with a lemon zest quality. The palate is still spicy with a cedar wood character, developing to tobacco and liquorice and balanced by salted caramel.   27. SINGLE MALT | SCOTLAND, LOWLANDS The Lowlands produces gentle, light whiskies, often very dry and devoid of peat. Lowland whiskies are commonly referenced as feminine drams, “the Lowland Ladies”. Most of the whisky regions of Scotland, and indeed the world, there can be some crossover. Lowlands is different where the method of production differs; Lowland whiskies are triple distilled. Auchentoshan12 Years Old Smooth, fresh and nutty with a golden honey appearance. It has a crème brulee smell with a burst of citrus and the signature nuttiness and green leaf of Auchentoshan. Smooth and sweet with hints of tangerine and lime. To finish, it is gingerly and slightly drying with a pleasant lingering nuttiness. Auchentoshan Three Wood Intense, sweet and complex with a rich golden bronze appearance. It has a blackcurrant, brown sugar, orange, plum and raisin aroma with a fruit and syrup taste. The finish is fresh and fruity with long oaky sweetness. XOP (Xtra Old Particular) Single Grain 36 Years Old Initially sweet and juicy with fresh sweet floral notes and dried fruits of raisin and sultana and a huge hit of sweet juicy dried apricots.   28. SINGLE MALT | SCOTLAND, ISLANDS A diverse whisky region, the proximity to the sea often proffers slightly salty, sometimes smoky whiskies. Balance is a recurring theme; sweetness and pungency in perfect harmony. A decidedly eclectic assortment of whiskies is to be found on the Islands. • Arran 14 Years Old • This 14 year old bottling is aged in ex-bourbon for the first 12 years and then the final two years in fresh bourbon casks and fresh sherry casks. This sees no peated malt. The aroma is quite floral and fruity with a touch of wool detected. As you take a nip, salted peanuts come next with honey and warm cereal. As you take a nip, salted peanuts come • Ledaig10 Years Old • Quite light and well-balanced. There is a very soft peat with a subtle smoke. Notes of barley and malt extract with walnut and pine oil and a hint of iodine with notes of dried fruit and nuts. Medium-bodied and quite rich. Notes of spice and smoke gathering above the charred oak. The peat is quiet and dry with a touch of black pepper and earth. Medium length and slightly smoky with spice. • Machrie Moor Cask Strength • Toasty peat wafts up first, backed up by notes of fresh summer berries and tropical fruit. Grilled pineapple, raspberries and custard. Smoky richness persists throughout the entire palate. Lingering oak-y vanilla on the finish. Highland Park 18 Years Old A profusion of ripe floral notes and fresh blossom with a delectable fruit salad. Notes of honeyed exotic fruits with a little botrytis. Creamy and full with fruit conserves and espresso. A creaminess with cinnamon and allspice. Notes of toffee with thick black forest honey with a touch more citrus. Long and well sugared with a herbal edge. • Highland Park Dark Origins • Dusty baking spices and cocoa at first, cinnamon, vanilla, dates. Coffee cream Revels (possibly a couple of the orange ones too), a touch of blackcurrant/ liquorice, plus butterscotch and an interplay between milk and dark chocolate. Sweet, fragrant peat emerges with nutty melted milk chocolate and a little orange alongside some pastries. Long and sweet, a little dry chocolate, just a hint of that heather smoke, then salivating. Rounded first-fill Sherry notes come from both the European and American oak casks. This is a great chocolatey addition of a no age statement release. • Talisker 10 Years Old • Brilliant gold, powerful peat smoke with just a hint of sea-water saltiness, fresh oysters and a citrus sweetness. Full-bodied. A rich dried-fruit sweetness with clouds of smoke and strong barley-malt flavours, warming and intense. Peppery at the back of the mouth. • Talisker 18 Years Old • The nose is quite clean and fresh. There is a mixed fruity sweetness with a spicy character. The peat and smoke rise with notes of perfume and thick oak. Hints of Calvados and a touch of acidity with ground ginger. The palate is thick and rich and full-bodied. Notes of spicy, peppery oak, espresso beans and wood smoke. • Tobermory 10 Years Old • Barley sugars and toasted cereal, supported by hints of winter spice and soft oak. Salty melted butter. Quite sweet and light. There are elements of acacia honey and continuing oak from the nose. Smoke and black pepper notes rise gently with a touch of dried fruit and peels.   29. SINGLE MALT | SCOTLAND, CAMPBELTOWN Campbeltown whiskies are a curious mix. Characteristics includes a defined dryness with a pungency, smoke and a solid salinity. Imagine a cross between the Lowlands and the Western Highlands with a pinch of salt thrown in for a good measure. Glen Scotia Victoriana Elegantly oaky with notes of toasty sugar and citrus peels, more fruit forward on the nose with dark berry juiciness at its core. Orchard fruits dusted with dark chocolate. Hazelburn 12 Years Old Pungent and aromatic with notes of dried fruits, plenty of sherry integration with notes of citrus, toffee and nuts. Spicy on the palate, nutty and cocoa rich, oak, coffee, gentle peat. Coffee, spices, citrus, chocolate, long finish. Longrow Salt and a leathery smokiness come to the fore in a maritime combination; like a Harbour Master’s Jacket. Light and sweet with notes of green grapes and rhubarb, a great contrast to the nose. Then comes a big blast of smoke. That salty smokiness returns from the nose providing a deeply satisfying ending. Longrow 18 Years Old A double distilled, heavily peated single malt from Springbank. Apple peels and smoke. Earthy peat, damp leaves, notes of truffle, woodshed, porridge oats and soot. Peaty with notes of spicy. Very oily with hints of orange zest, pepper and chilli. Very big smoked meats and honey. • Springbank 10 Year Old Local Barley • Caramel-coated shortbread, honey, chocolate ice cream and a whiff of bonfire smoke. Mint chocolate, tangy marmalade, wafts of dusty oak and toasty peat. A hint of peanut brittle and cumin. Baking spices, burnt wood and treacle. • Springbank 10 Years Old • The nose is big-bodied with oaked aridity. The peat is present and quite pungent with an earthen rootiness. Notes of exotic fruits and a hint of salinity. The palate is full-bodied with a good helping of cereal sweetness. There is a richness to the peat, with a dark nuttiness and whirling smoke. The finish is long and crisp with a coastal tang and a trailing peat with oaked dryness. Springbank 12 Years Old Cask Strength Matured in 70% ex-Sherry casks and 30% ex-Bourbon casks, this Campbeltown malt is bottled at 56.3% abv. Sweet vanilla and biscuity malt. Dried herbs, oak and hints of creamy fudge. Toffee apples. Rich fruit and dried peels. Slightly oily, creamy palate entry. Vanilla, honey, spiced oak and digestive biscuits. Balanced, malty finish. Hints of salty smoke. • Springbank 15 Years Old • Fragrant with a certain richness. Notes of fruit salad and a hint of caramel, pineapple, guava and passionfruit lurk.   30. Springbank18 Years Old Toasted bananas, honey & bakewell tarts with coastal hints. Quite oily. On the palate is big, spicy and gutsy with hints of chilli, pine, citrus aniseed and rich fruits. Long, salty, chocolate caramels with hints of smoky fruits to finish. • Springbank21 Years Old • Heather, plums and peach, quite dry but with hints of honey. There’s a slight waxy note too with a little bit of leather. Very soft with caramelized fruit and raisins and cassis. The spices include cinnamon and vanilla and there’s some oaky dryness to balance the honey. A subtle wood smoke and a hint of the sea. Very long finish with hints of aniseed and raisin sweetness. SINGLE MALT WHISKY| OTHER COUNTRIES Single malt whisky is malt whisky from a single distillery, that is, whisky distilled from fermented mash made exclusively with malted grain (usually barley), as distinguished from unmalted grain. Under Scotch Whisky Regulations, a “Single Malt Scotch Whisky” must be made exclusively from malted barley, must be distilled using pot stills at a single distillery and must be aged for at least three years in oak casks of a capacity not exceeding 700 litres. • Limeburners Port Cask | AUSTRALIA • Exhibiting spice and fruit aromas when neat, a splash of water unleashes malted barley, aromas of port and honey with hints of raisins and buttery caramel. • Limeburners Sherry Cask | AUSTRALIA • This whisky is matured in 2nd-fill bourbon barrels and finished in a very old small sherry cask. Medium coloured whisky with intense and complex flavours, a full taste and a smooth finish. • LimeburnersDirector’s Cut The Peated Cask | AUSTRALIA • This Director’s Cut whisky has been smoked with peat collected by hand from near the Valley of the Giants and matured in ex-Bourbon American oak cask and finished in an old Australian sherry cask! • Timboon“Christie’s Cut” | AUSTRALIA • Named after the famous police officer John Christie, this whisky is big and bold. At 60%, the cut has a extra long finish featuring vanilla, butterscotch and smoke. • Braunstein Danica Whisky | DENMARK • Braunsteinis a relative newcomer in the world whisky landscape. It is a Danish micro-distillery and brewery located in the small town of Køge, not far from Copenhagen. Their production is mostly organic and local. The rich nose is full of white pepper, and woody, floral aromas. Also huge vanilla notes with toffee and some hints of sultanas come through. This rather thick and syrupy nectar flows onto the palate with masses of candied oranges, hot spices, caramel and some dark berries. The finish is warm and slightly grassy. • ArmorikDouble Maturation | FRANCE • From the Warenghem Distillery in Brittany, France, comes a complex single malt which is firstly aged in casks made from oak grown in Brittany. Following this, the whisky is moved over to Sherry oak casks for a finishing period.   32. BLENDED WHISKY | OTHER COUNTRIES A blended whisky is the product of blending different types of whiskies and sometimes also neutral grain spirits, colouring and flavourings. It is generally the product of mixing one or more higher-quality straight or single malt whiskies with less expensive spirits and other ingredients. • Tiger Snake Rye of the Tiger | AUSTRALIA • This is hand distilled from a mash of 60% Rye and 40% Pale Malt Barley. The rye was selected from the pristine fields on the South Coast of WA, which enjoy a cool Mediterranean climate. This Rye of the Tiger has been twice distilled in small batch copper pot stills. K5 Premium | BHUTAN The K5 Premium Blend Whisky was produced in 2008 to mark the auspicious year as it was the coronation year of the 5th King of Bhutan, King Jigme KhesarNamgyelWangchuck. A harmonious blend of East and West Scotch whiskies and ends in Bhutan admixed with custom made triple distilled Grain Spirits and natural Himalayan virgin spring water to express its premium character of this blend. It has light pleasing fruitiness, with a hint of sherry and ends of with lingering taste of sweetness. • Batshit Mental Ideas | ENGLAND • Bonfire embers and smoky bacon crisps, with a touch of maple syrup. Notes of sponge cake, fragrant cereals and fruity coffee follow. Earthy peat develops smoke, cinnamon and cereals, balanced by boiled sweets and chewy raisins. Lasts for aged with barbecue char on the finish. John Jameson | IRELAND Matured for at least 7 years. Soft hints of vanilla on the nose with a light smooth aroma. Smooth offering of grain and honey with a slight dryness near the end. • Ichiro’s Malt MWR Mizunara Wood Reserve | JAPAN • Bottled in 2010, this was crafted by Ichiro Akuto, this is a vatting of various single malts which have been aged in Japanese Mizunara oak. Honeyed and toasty, sweet and light citrus, hints of grapefruit and a sugar in a bowl, tangy. Rich, spice, fruity, tangy malt. Hints of honey and toffee apples. Abrupt, but very spicy, sweet. • Ichiro’s Malt Double Distilleries | JAPAN • From a crackling Ichiro’s Malt range, this is a vatting of whisky from both the Hanyu and Chichibu distilleries. The whisky was matured in Japanese oak, and vatted and bottled at Chichibu in 2010. • Kakubin Suntory | JAPAN • Edgy and slightly bitter with grain alcohol, oak, cereals, light vanilla, grapefruit. Short, sugary sweet and watery with light honey, light pepper and ginger. • Karuizawa Club Mars | JAPAN • This texture is rather round and delicious. It is nice in the mouth and develops an interesting complexity. Fruity aroma in the nose are complemented by the appearance of pastry flavours like butter and dough, with some notes of citrus, cherry and liquorice. Very light smoky peat is still present in the background. With its complexity and sweetness and the aromatic bouquet approaching those single malts aged in sherry cask will definitely surprise you.   33. Taketsuru Pure Malt | JAPAN Sherry-soaked plums, raisins and green apple slices. Honeyed cereal, black pepper and hint of barrel char. Espresso beans, milk chocolate, tobacco leaf and lingering sheried fruit. There’s a slight touch of smoke as it develops. Elegant smoke continues with golden barley and a final hint of coffee. • Tenjaku | JAPAN • Faint smoky accent. Sweet aroma, redolent of pear and dried fruit. A slightly edgy attack. Well-rounded and mellow. Slightly spicy. A long finish with a hint of white oak and a spreading sweetness. • The Lucky Cat, “Ash 99” | JAPAN • Fresh fruit incense and mint. Refreshing aroma reminiscent of herbs feel marmalade and orange peel on top. Theirs is a creamy sweet aroma feel of vanilla and cookies from the back. • Monkey Shoulder |SCOTLAND • An elegant, stylish nose of marmalade, Crema Catalana, cocoa and malt. Plenty of vanilla and a sprinkling of winter spice alongside a mouth-watering hint of aniseed. Very malty, creamy delivery with a suggestion of berry fruit.   36. YAMAZAKI Yamazaki is located in Shimamoto, Osaka, Japan. Opened in 1923 and owned by Suntory, it was Japan’s first commercial whisky distillery. Yamazaki Distiller’s Reserve This single malt from the Yamazaki Distiller is jam packed with superb red berry notes, gained from the whisky being matured in Bordeaux wine casks and sherry cask.   37. HAKUSHU Hakushu distillery is a Japanese whisky distillery. It is owned by the Suntory group and situated in the Toribara locality of the former town of Hakushu, in the Yamanashi Prefecture, Chubu region, Japan. Hakushu Distiller’s Reserve From the Hakushu distillery in the foothills of Mount Kaikomagatake comes their Distiller’s Reserve single malt whisky, a no-age-statement expression, that captures the smoky, herbaceous characteristics. The herbs are very up front with this one. Peppermint, pine and pleasant grassy notes. Cucumber and melon round out the nose. All the notes on the nose swim effortlessly through the palate, the mint developing sweeter notes as it goes on. A waft of smoke appears during the long finish. Hakushu 12 Years Old Toasted barley, seed and nut loaf, chopped almonds and a little bit of barrel char. Hints of milk chocolate and dried grass bring sweetness. Much more fruit on the palate, rich, herbaceous and grassy with a waft of smoke along the way. Quite short, though enjoyable with orange peel and a touch of minerals. CHITA Founded in 1972 in Aichi Prefecture, the Chita distillery located near the village of the same name and is exclusively dedicated to the grain whisky distillation. Suntory was rather quiet about Chita distillery even though it’s an essential element for the production of its blended whiskies which are among the best in the world over the last 10 years. The Chita Single Grain It is a vatting that consists of at least 10 different grain whisky components that have been matured in different cask types including American white oak casks, Spanish oak casks and ex-wine casks. The nose is soft, floral and quite perfumy at the beginning, then slowly lemon and honey flavours develop, followed by caramel mango notes.   38. CHICHIBU The Chichibu distillery is small, with only nine full-time employees. It is owned by Venture Whisky which was founded in 2004 in chichibu, Saitama, just outside of Tokyo, hence its name. The distillery which specializes in single malt whisky was the first whisky distillery built in Japan since the 1970s and became operational in 2008. It stands on a small hill in the outskirts of Chichibu, a city of medium size with a population of about 70,000. Ichiro’s Malt Chichibu “Chibidaru” Chibidaru- Japanese for “cute casks” – are small casks that give lots of flavor quickly. Bursting with heady aromas of lemon and orange peel- like walking through a citrus grove in early autumn with fresh green apples, enriched by sweet milk chocolate notes. Fruity with lip-smacking green apple notes combined with perfumed apricots and peaches. There’s some bitter-orange marmalade in there along with earthy spiciness of cardamom and coriander seed. Very clean and refreshing as the fruit gently fades. • Ichiro’s Malt Chichibu Single Cask #2650 • From its Mizunara wash backs and small stills with steep lyne arms to the fact that the mashman uses a wooden paddle to stir the mash, Chichibu is a hands-on distillery with quality as an intrinsic focus. With the ground now broken on a blending room, and an off-site cooperage, Ichiro Akuto's distillery, formed from the ashes of his grandfather's Hanyu distillery, is one of the finest producers in Japan. • Distilled in December 2010 and bottled in October 2016 • MARS SHINSHU • Sandwiched between Japan’s soaring Southern Alps and the towering Central Alps, at just over 2600 feet, Mars Shinshu is Japan’s highest whisky distillery. The Hombo family have been distilling for more than a century and they added whisky to their repertoire in 1949. Back then the distillery was located in Kagoshima Prefecture on the southern most island of Kyushu. Until 1984, it was the southern most whisky made in Japan, which ended with the Hombo clan moving the distillery to the idyllic alpine setting of Miyada village in southern Nagano Prefecture. They chose this site for its cool temps, which slowed maturation, and the plentiful, soft, granite filtered snowmelt fed aquifers. • Mars KomagatakeShinanoTanpopo- Nature of Shinshu • The 2014 distillation of malt whisky vatting in new Bourbon and American white oak barrels, mixed with Sherry cask of malt aged more than 20 years old. It is the single malt whisky of soft and gorgeous scent with the flavour of ripe fruits from the long-aged malt in sherry cask. NIKKA The Founder , Masataka Taketsuru established Nikka Whisky in 1934 and built its first distillery in Yoichi, Hokkaido. • Yoichi 10 Years Old .....................................................................................................55|N.A • Plenty of fruit notes- peach stands out in particular, ripe, vibrant and subtly floral. Then there’s rich vanilla custard, peat smoke and a hint of nutmeg spice. Oily and sweet with peat smoke following swiftly afterwards. Light oak and developing fruit notes beneath. Appealing oak lasts on the finish. Yoichi 15 Years Old Gentle and creamy with light fruits and a little nutty development. Quite sweet with notes of subdued peat resulting a long and beautifully bittersweet. Yoichi 20 Years Old A powerful cask strength 20 years old single malt that previously bested some very high-profile Scottish malt at a blind tasting in 2003 and received 95 points in Jim Murray’s Whisky Bible.   40. SPIRITS BOURBON Bourbon is a type of American whiskey: a barrel-aged distilled spirit made primarily from corn. The name is ultimately derived from the French Bourbon dynasty, although it is disputed whether Bourbon County in Kentucky or Bourbon Street Maker’s Mark A wheated bourbon whiskey from the heart of Kentucky. Fruity and rich. There are lovely notes of spiced honey and mixed peels, a little malmsey, hazelnut and a touch of cut fruit with toasty oak providing a backbone. There are notes of rye and spice, barley malt, a little nut oil with butterscotch and vanilla. Willett Rye Lively with youthful notes. A little burn which would be expected at this proof. The floral and botanicals are here as well. A little menthol comes forth, along with fresh cut grass and spice. • TEQUILA / MEZCAL • Agave, the plant from which tequila is distilled, played a much larger role than just being the source of an alcoholic drink. Its leaves were used for a hemp-like fiber to make mats, clothing, rope and paper. • Don Amado RusticoMezcal • Don Amado Rustico is made in Santa Catarina Minas, Oaxaca by MezcaleroGermánBonifacioArellanes. The same distillery also produces Mina Real Mezcal. This mezcal carries a bit of smoke, but it doesn’t overwhelm the fruit and floral notes that mix nicely with notes of minerals and clay. It is silky on the palate with a vibrant finish. • Milargo Silver • Milargo (translated to “miracle”) is a tequila which uses only agaves grown on the estate of Jua de la Torre, now a partner in the brand. His agaves were unaffected by the bacteria which caused a shortage in agave and tequila production in the mid 90’s. Most tequilas are distilled twice, but Milargo is distilled three times, twice in a pot still and once in a stainless steel column still. Hendrick’s Produced by William Grant & Sons in Girvan, Scotland, and launched in 1999. In addition to the traditional juniper infusion, Hendrick's uses Bulgarian rose and cucumber to add flavour. Hendrick's gin is bottled in a dark brown apothecary-style bottle. • Monkey 47 • An unusual gin from the Black Forest in Germany, Monkey 47 contains a unique ingredients. Predictably complex, this is a robust and powerful gin with plenty of spice, fruit and herb flavours. Wooded and reassuringly heavy. • Roku Gin • The first gin from Japan’s legendary Suntory – Roku Gin. This expression is made using a selection of botanicals, including six Japanese botanicals provide a whistle-stop tour of the four seasons. These include sakura leaf and sakura flower for Spring, sencha tea and gyokuro tea for Summer, sansho pepper for Autumn and yuzu peel for Winter.
