  2. Ingredients • For 6-8 servings • 2 large onions • 1 small sized carrot • 6-7 cloves of garlic • 1 thumb size piece of ginger

  3. Ingredients • 1 spring onion • 2 large sized potato • 500-600 grams of chicken thigh • 1 bunch of coriander/cilantro • 500 ml of water

  4. spices • 1 teaspoon of turmeric • 1 tablespoon of grounded cumin • 1 tablespoon of flour • 1 teaspoon of grounded black pepper • 1 teaspoon of grounded coriander seeds • 1 teaspoon of paprika or grounded cayenne pepper • ½ teaspoon of grounded cloves • ½ teaspoon of grounded cardamom • Salt to taste

  5. Method • First of all, chop onions, spring onions finely and put them in same bowl. • Secondly, grate the garlic, ginger and carrot. Put them in same bowl as onions. These steps would take between 15 to 20 minutes.

  6. Method • Thirdly, put all the chopped and grated vegetables into a large pot with medium to strong heat. Cook them until they are golden brown. This would take 10 minutes. • After the vegetables became golden brown, put 500 ml of water and chicken thighs and spring onions and turn into low heat. This would take 1 hour.

  7. method • While you are waiting for the broth to cook, peal and dice the potatoes into 1x1 cm size. • After you finished dicing potatoes, put all spices into a bowl.

  8. method • After you have waited for 1 hour, take the pieces of chicken thigh out and remove the bones. Then put the meat back into a pot. • Then, put spices into pot and wait for 15 minutes. • After you waited for 15 minutes, put the diced potatoes into pot. You have to wait precisely 20 minutes. If not, the potatoes will become mushy and the curry would look like mud. Cook in low-medium heat

  9. method • After 20 minutes, stop the heat and serve with basmati rice with coriander herbs on top.
