  • Castanea sativa is a species of deciduous tree with an edible seed. It is commonly called sweet chestnut and marron. Originally native to southeastern Europe and Asia Minor, it is now widely dispersed throughout Europe and in some localities in temperate Asia. 

    The Romans are saidto have brought the tree from the MediterraneantoNorthern Europe.

  • So the chestnut is probably as old as the roadto Rome.

    Another story saysthat the Celts have spread the fruit.

    But whatcountstoday, is that the nut is nowwidely spread andused in many different ways.

    The sweetchestnutthat is edible, as opposedto the horse chestnut, is easilyrecogniseablefromits soft, whitish point.

    It is eatenraw, as well as roasted or cooked.

    In France forinstance, chestnutpuree is verypopular in desserts or as a side servingwith game dishes.

    Innumerouscountries, it is soldroastedand hot on street corners.

    In the North of Italy the marron glacé is extremelypopular, candiedandglazed.

    The sweetchestnut is the only type of nut thatcontainslots of vitamine C next to a lot lesscalories.

    But the sweetchestnutremainsanunderestimated nut, even ifitremindsus of the cosy and secure warmth of the family gathering.

Dough rolled out to: 2 mm

Result: 96 pieces

Weight per 4 pieces:

Puff pastry: 100 gram

Filling: 175 gram

Weightafterbaking:250 gram

  • Moisten the puffpastrybefore rolling in the filling

  • Length of the portion 7 cm

  • Brushsurfacewithlooselybeateneggtwicebeforebaking

  • Second time of brushingjustbefore the pastrygoesinto the oven

  • Choose moderate floor heat

  • Do notexceed20 minutes of baking time
