  2. Most of the Indian dishes and delicacies are famous because of the spices and their inimitable taste. One of the most scrumptious Indian meals is Modern Tandoori Dish. Indisputably, it is one of the most popular Indian dishes all across the world. The history of the dish dates back to 1920 when it was first prepared in a Peshawari restaurant (Moti Mehal).   4. Recipe for Modern Chicken Tandoori Dish As it is clear from the name Tandoori Chicken that the dish has something to do with a tandoor. A tandoor is basically a traditional Indian oven made of wood or charcoal. It consists of fired clay to which the chicken is directly exposed. This is the main thing which adds flavor and an exceptional taste. The approximate temperature to which the oven can heat up is 450-degree centigrade (900 degrees Fahrenheit).

  5. STEP 1: Prepare the Oven OR Tandoor So, the first step you need to do is, prepare the oven (Tandoor). Turn on the flame to medium-high and leave it on for at least 20-25 minutes for it to get hot appropriately.

  6. STEP 2: Marinate the Chicken After you have turned on the oven (tandoor), the next step is to marinate the chicken. A 1 kg chicken is enough to feed 2-3 people. If you are new to this, make sure you take not more than 1 kg chicken. Wash and clean the chicken by taking out excessive fats from it. If the chicken is wet make sure you pat dry it with a towel. Now, with the help of a fork and a knife, make holes and slight cuts in the chicken so that the spices (masala) penetrates deep down. After the chicken is prepared, go ahead and marinate the chicken now!!!

  7. STEP 3: Make the Mixture The chicken is marinated in two steps to add full flavor and richness. In a separate bowl, make a mixture which is used to marinate the chicken. Add a little bit of lemon juice, one tablespoon Kashmiri red chili powder and one and a half tablespoon of salt and mix it well. Put this mixture on the chicken spreading it thoroughly all over it. After applying the mixture to the chicken, cover it and let it set for some time (approximately half an hour) so that the mixture penetrates into the chicken.

  8. STEP 4: Prepare the Second Mixture On the other hand, we need to now prepare the second mixture. For this, you will need some yogurt. Add the yogurt in a bowl, and add the spices in this order. First, add the cumin powder and the coriander powder and mix it well to avoid the formation of small balls in the mixture. After this, add the remaining red chili powder, garam masala powder, some lemon juice and ginger-garlic paste. Next, you need to add is pepper, Kasurimethi powder, and red food color and mix them well. On the other hand, we need to now prepare the second mixture. For this, you will need some yogurt. Add the yogurt in a bowl, and add the spices in this order. First, add the cumin powder and the coriander powder and mix it well to avoid the formation of small balls in the mixture. After this, add the remaining red chili powder, garam masala powder, some lemon juice and ginger-garlic paste. Next, you need to add is pepper, Kasurimethi powder, and red food color and mix them well.

  9. STEP 5: Cook in Oven or Tandoor Now add the chicken in the bowl of the mixture and leave it for at least 6 hours in the refrigerator. The oven on the other hand (which you prepared) must be hot by now. Before putting the chicken in the oven add three tablespoons of mustard oil. Put the chicken on a cooking rack and place it in the tandoor (Don’t forget to flip the chicken half way through). After 10-15 minutes your delicious chicken will be ready.
