  3. Characteristics of the Beef Industry • About 35 percent of total U.S. livestock and poultry income comes from beef industry • Consumption has dropped since 2005 • Demand depends on • Number of people • Income per person • Changes in people’s meat preference

  4. Characteristics of the Beef Industry (cont.) • Most beef eaten in U.S. comes from domestic production • About 9 percent come from imports • About 7 percent is exported • Majority of farms have small-size herds; largest herds account for most sales • Trend toward fewer small operations

  5. Characteristics of the Beef Industry (cont.) • Industry has recently shifted from formerly heavy concentration in Corn Belt to Central and Southern Plains states • Most high-capacity feedlots in TX, KS, NE, and OK • U.S. broken up into eight cattle-production regions

  6. Development of Beef Breeds • Many modern beef breeds were developed in Europe, beginning in 1700s • Selection based on desired traits best for farm location • There are more than 50 breeds of beef cattle available to U.S. producers

Selection of a Breed • Points to consider • All breeds have strong, weak traits • No one breed is best for all traits • Each has wide range of genetic variation • Best breeding stock, breeding practices more important than breed selected • Breed should fit location where it’s raised • Market demand should be determined
