Alone or with good friends, for an extended stay or just the night, the Lincoln Inn and Restaurant offers a charming backdrop for your perfect vacation experience. From the tranquil sounds of the river to the lingering scents drifting from the restaurant, the Inn inspires all the senses. Chef Saramova and her partner wanted to replicate the European model she was familiar with, and after searching, they found their venue. The Lincoln Inn has been an upscale fixture in Woodstock, Vermont’s highest profile tourist town and home to the state’s only National Park, for years - Paul Newman was a longtime regular whose private dining room is now used by guests to enjoy Saramova’s lavish meals. The most basic offering is a four-course prix fixe menu with a few choices/options, but for the real shebang, the meal worth coming to Vermont for, guests turn themselves over completely, choices, for a seven or Our 12 Course Chef Tasting Menu (though they inquire about allergies when reservations, accommodate special dietary needs including gluten free). I had the seven-course option, and while I am a picky eater, every single selection dazzled. They are also exceptionally beautiful on the plate, and Chef Saromova told me that when she creates a new menu item, she first imagines what the dish will look like, then draws a sketch of it, and then figures out the flavors and recipe components. “When you eat, first you see it with your eyes, then you smell it, then you taste it. I construct it that way, but it’s not complete until you’ve had the last bite.” The menu changes all the time but some standout examples I had on my visit included a duo of butter poached Maine lobster and pan friend Acadian redfish, also from the Gulf of Maine, on a bed of mascarpone enriched orzo. Another standout courses was a beet and goat cheese salad with pomegranate seeds and candied pecans, laid out on the plate like maze, just fabulous. The 4-course dinner is offered nightly with one seating and begins with a cocktail in the Inn’s classic New England Tavern before everyone moves into the dining room. The 7 and 12-courses Chef’s Tables menus are offered on demand (in advance) and served in the Paul Newman room, with optional wine pairing menus available. Both dinner options require reservations, but neither requires an overnight stay. The Lincoln Inn is located on the west side of Woodstock, beyond walking distance from the village center, and in winter is the closest lodging here to the popular Killington ski resort, the largest in Vermont. The Woodstock Inn & Resort, the town’s largest lodging destination (built by Laurance Rockefeller and originally part of his Rockresorts brand) offers guests free in town shuttle service and frequently ferries people to and from the Lincoln Inn for dinner as an alternative option.
