  1. AVOID BLAMING THE OAK Along with acidity, tannins, and sweetness, some wine bottles list the attribute of oak. Although the length of a wine's fermentation in oak barrels affects its flavor, aroma, and texture, many winemakers prefer not to talk about this stage of the aging process. They have been concerned in recent years that people will assume their wines are excessively "oaky," like oak wine rack which would imply that the grape flavor is drowned out by strong oak characteristics. Additionally, there is cause for concern for winemakers because oak age is frequently incorrectly attributed to wines that are overly thick, tannic, boring, or dry. Words like leather, cedar, mushroom, and vanilla may be familiar to you when discussing wines aged in oak. Over the years, great winemakers who still make oaked wines have refined these nuances. You can typically discern a high- quality, oak-aged wine with ease: it tends to be smoother, richer, softer on the tongue, and better balanced than a non-oaked wine. You will undoubtedly sample some oaked wines that completely fall short, but keep in mind that in these cases the initial grapes, not the oak sideboard wine rack, were to blame for the wine's failure.
